taste of tuesday: grilled salmon

I tried out this new salmon recipe on Sunday. the result: good. falls in third behind honey mustard salmon and miso salmon. it is actually very similar to the honey mustard recipe. Jack ate it up. maybe because I told him it was candy chicken-the brown sugar makes it sweet. Grilled Salmon

taste of tuesday: miso salmon

I love fish, but the only kind I'll cook (or know how to cook) is salmon. and only on the grill. don't like the fish smell in the house. I buy my salmon from Costco, but the fillets are always too much for one meal, so I freeze half and make honey mustard salmon one week and miso salmon another. Miso salmon is my favorite dish from Cheesecake Factory. I have found a recipe that is similar and super easy to make. Miso Salmon
(adapted from Martha Stewart)
Ingredients:
  • 1 cup white miso
  • 1/3 c. rice vinegar
  • 1/2 c. packed brown sugar
  • 2-3 tbs soy sauce
  • 4 salmon fillets (6-8 oz each)

Directions:

1. In medium saucepan, combine all ingredients except fish. Cook over medium heat, stirring occasionally, until miso and sugar have dissolved. Cool to room temp. Place salmon in bag and pour marinade over fish. Marinate for at least 2 hours (I usually do 6-8 hours. intensifies the flavor).

2. place salmon on grill and cook approx. 10 minutes each side, coating with marinade, until fish is flaky.

serve with brown or white rice and snow peas.

if you have any good fish recipes, do share. I am always looking.

salmon recipe

Last night, we had a tasty dinner of Honey Mustard Salmon on the back patio...a perfect Sunday evening. Ever since our win at the the ward's 24th of July meat cook-off, I have had multiple requests for this salmon recipe from friends and friends of friends. Jack even likes it. Lee, your salmon is famous in the Vegas valley. Here is my cousin's recipe:

Lee Lowe's Honey Mustard Salmon
ingredients:
olive oil
soy sauce
honey
Dijon mustard
fresh salmon (w/out skin, from Costco)
salt/pepper

1. Place salmon in a baking dish
2. Salt/pepper one side of salmon
3. Drizzle with olive oil, brush over fish (coat entire salmon)
4. Drizzle entire fish with soy sauce
5. Place 2-3 large spoonfuls of mustard on salmon and spread over entire fish
6. Drizzle honey over entire fish

flip salmon over and repeat steps 2-5. With ingredients that have fallen into bottom of dish, stir together and pour over salmon. Cover and place in refrigerator and marinate 2 hours prior to grilling. Cut fish into smaller portion sizes before cooking. Cook on hot grill–about 8 minutes on each side.

(To avoid sticking/flaky salmon, brush grill with olive oil and cook fish in basket designated for cooking fish on grill–I got mine at Williams-Sonoma)
