taste of tuesday: mint brownies

so these brownies aren't your traditional St. Patty's day items, but they are REALLY good and green. this recipe is from my friend Tiffany (who should be delivering her baby any day now). she makes these at Christmas time and we inhale them as soon as she delivers them.


Mint Brownies
(not to be confused with BYU brownies-these are better)
1st layer:
1 c. butter
¾ c. cocoa
4 eggs
1 ¾ c. sugar
¼ tsp. salt
1 ¼ c. flour

Melt butter and then mix in other ingredients. Pour in 9x13 pan. Bake at 325 for 25-30 minutes

2nd layer:
1 ½ c. butter
3 c. powdered sugar
¼ c. cream or milk (I use milk)
1 ¼ tsp. mint extract
A few drops of green food coloring

Beat all ingredients. Spread on cooled brownies. Put in freezer for at least 15 minutes.

3rd layer:
1 – 6 oz. (or more) package of semi-sweet chocolate chips
3-5 T. margarine (not butter)
(I sometimes add a little milk if the consistency is too hard)

Melt together in glass bowl over boiling hot water on stove or in microwave. Do not boil. Spread over frozen brownies. Put in freezer or fridge until the chocolate hardens. Then remove cut into small squares. Store in air tight container in fridge.
