
Fruit Pizza
(from my mom)
Ingredients:
Crust:
- 1 1/2 c. flour
- 1/3 c. + 2 T powdered sugar
- 3/4 c. butter, melted
Topping:
- 1 (8 oz) pkg cream cheese, softened
- 1 tsp vanilla
- 1/2 c. sugar
- 1 c. whipping cream, whipped
Glaze (optional-I find the pizza is sweet enough without this)
- 1/2 c. sugar
- 1/2 c. orange juice
- 2 T fresh lemon juice
- 1 1/2 T. cornstarch
- 6 T. water
Directions:
1. mix all crust ingredients together and press into a pizza pan or stone. Bake 350* for 10-15 minutes. cool completely.
*you can also use sugar cookie dough from the store--easier and saves time. it can also be cut into thin disks to create individual pizzas.
2. make topping: whip together cream cheese, vanilla and sugar. fold in whipped cream. chill.
3. spread chilled topping over cooled crust. top with a variety of fruits: kiwi, bananas, strawberries, grapes, blueberries, pineapple, raspberries, mandarin orange sections, etc
4. for glaze: in a sauce pan, combine sugar and cornstarch. add OJ, water and lemon juice. stir well. bring to a boil, stirring constantly, until thick. chill before drizzling over pizza.
a perfect dessert for summer.

oh my goodness...all time favorite dessert from when we were younger...along with mini cheesecakes with vanilla wafers on the bottom. Did both of these for my birthday once...even have apicture of it! Love it!
