taste of tuesday: fruit pizza

I feel like this is turning into a food blog. I been doing other things than just baking, just no time to write about it. last week I completely neglected my family and household duties and cooked for the masses. It was the yearly RS Birthday Dinner and I was in charge of food. Our enrichment leader had a brilliant idea to have a Mad Hatter themed party. I couldn't pass up the opportunity to create numerous dishes in miniature form, fitting for a tea party. Fruit pizza was just one of the desserts served. The evening was a success. Thanks to all who helped. For a complete listing of recipes served go here.
Fruit Pizza
(from my mom)
Ingredients:
Crust:
  • 1 1/2 c. flour
  • 1/3 c. + 2 T powdered sugar
  • 3/4 c. butter, melted

Topping:

  • 1 (8 oz) pkg cream cheese, softened
  • 1 tsp vanilla
  • 1/2 c. sugar
  • 1 c. whipping cream, whipped

Glaze (optional-I find the pizza is sweet enough without this)

  • 1/2 c. sugar
  • 1/2 c. orange juice
  • 2 T fresh lemon juice
  • 1 1/2 T. cornstarch
  • 6 T. water

Directions:

1. mix all crust ingredients together and press into a pizza pan or stone. Bake 350* for 10-15 minutes. cool completely.

*you can also use sugar cookie dough from the store--easier and saves time. it can also be cut into thin disks to create individual pizzas.

2. make topping: whip together cream cheese, vanilla and sugar. fold in whipped cream. chill.

3. spread chilled topping over cooled crust. top with a variety of fruits: kiwi, bananas, strawberries, grapes, blueberries, pineapple, raspberries, mandarin orange sections, etc

4. for glaze: in a sauce pan, combine sugar and cornstarch. add OJ, water and lemon juice. stir well. bring to a boil, stirring constantly, until thick. chill before drizzling over pizza.

a perfect dessert for summer.
